Ute Nöthlings does conduct nutritional epidemiological research. Since 2012 she is the director of the DONALD Study, an open cohort study in children followed-up to into adulthood. She furthermore leads the competence cluster in nutrition Diet-Body-Brain. Her research focusses on the advancement of dietary assessment methods, dietary pattern analyses in chronic disease prevention, and the use of metabolomics and microbiome analyses to enhance exposure assessment or explain physiological mechanisms in observational epidemiological studies.
